Today Rudolfo Hisena, who is no stranger to the restaurant business, owns the restaurant. Rudolfo, also owned Rudolph’s in Gladstone and has owned and managed many successful restaurants beginning in New York City. Rudolfo understands excellent customer service and knows what cus- tomers expect. At Rudolph’s Steak- house, the food is fresh and the prices are fair. Rudolph’s atmosphere is charming yet comfortable. The dining room has beautiful stone and brick walls, with striking chandeliers and a well- appointed wine storage area accessible by a rolling library ladder. A lovely party room upstairs accommodates up to 30 guests and an outdoor patio is particu- larly popular. The vibe is New York casual, and attracts customers for busi- ness and casual lunches. In an exciting culinary move, Rudolfo has just announced a partnership with one of New Jersey’s most respected and famous chefs, DAVID DRAKE. Drake has been credited as a “pioneer of modern American cuisine.” The New York Times calls him “A Kitchen Superstar.” He is well regarded among critics and peers, and has consistently earned remarkable reviews in The New York Times, New Jersey Monthly, The Star-Ledger, among many others. Drake’s is an incredible success story, having lost his hand at age 14 in a fire- works explosion. Rising to the chal- lenge of adversity, David started his career at seventeen as a dishwasher at Chez Odette in New Hope, Pa. He achieved many successes along the way, becoming executive chef at The Frog and The Peach in New Brunswick, working alongside Chef Craig Shelton at The Ryland Inn and David Burke at the River Café, some of the biggest personalities in the business. In Scotch Plains, David was chef owner at The Stage House where he elevated that restaurant to the state’s top tier. He eventually opened his namesake restaurant in Rahway, which closed during the recession. Recently Drake has been chef at Alice’s in Lake Hopatcong, where his cuisine again impressed The New York Times. Today, Drake is very enthusiastic to team up with Rudolfo. In Bernardsville, customers can expect him to focus on American classics, with a bit of French influence, using the finest and the freshest seasonal ingredients, many of which are grown at nearby Jersey farms. Some of the featured dishes prepared by DRAKE are: charred black angus steak tartare, grilled octopus with Italian white bean salad and romesco crab croquettes; sockeyed salmon, prime aged sirloin with finger- ling potatoes. For lunch a tasty chilled chicken salad with grapes, walnuts and baby greens and a lobster roll made with fresh Maine hardshell lobsters. Appetizers will feature chilled gazpa- cho using organic heirloom tomatoes. For dessert there will be a chocolate soufflé with pistachio gelato and pineapple upside-down cake to name a few. Hours of operation are: Tuesday- Friday, 12-3pm for LUNCH and Tues- day- Thursday, 5-10pm, Friday and Saturday 5-11pm and Sunday 4-9pm for DINNER.
