Asparagus Soup

Ingredients

Ingredients

  • 1 large potato - diced
  • I medium onion - diced
  • 2 cans of chicken broth
  • 1 and a half pounds fresh asparagus cut in one-inch pieces
  • Parsley Thyme, salt & pepper according to taste.

Instructions

Directions

  1. Combine all ingredients in a cooking pot
  2. Cook at medium heat on stovetop for about 30 minutes until potatoes and asparagus are tender
  3. Ladle mixture in batches into blender
  4. Pulse for a few seconds
  5. Serve as it is, or top with croutons, a teaspoon of sour cream and chives.
