large potato - diced
I medium onion - diced
2
cans of chicken broth
1
and a half pounds fresh asparagus cut in one-inch pieces
Parsley
Thyme, salt & pepper according to taste.
Instructions
Directions
Combine all ingredients in a cooking pot
Cook at medium heat on stovetop for about 30 minutes until potatoes and asparagus are tender
Ladle mixture in batches into blender
Pulse for a few seconds
Serve as it is, or top with croutons, a teaspoon of sour cream and chives.
