Zucchini Bread

  • 3 cups of All Purpose Flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 Tbsp cinnamon powder
  • 3 eggs
  • 1 cup of vegetable oil
  • 2 1/4 cups white sugar
  • 3 tsp vanilla
  • 2 cups grated zucchini keep juice that collects on bottom of dish

  1. spray and flour two 8x4 inch glass pans (bread pans)
  2. preheat oven to 325
  3. sift all dry ingredients
  4. In a large bowl beat eggs, oil, vanilla, and sugar
  5. add sifted dry ingredients into the creamed mixture and beat well
  6. stir in zucchini and juice that collects in bowl and stir to combine well (don’t use mixer)
  7. Pour evenly into the 2 prepared pans and bake 50-60 minutes or until tester comes out clean.
  8. Cool for 20 minutes in pan and then remove and let it finish cooling on a rack.
