Martha’s Kale Salad

Ingredients

  • Kale – 1 bunch washed and sliced into fine strips
  • Wild Rice – 1 cup
  • Chopped nuts
  • Onions or scallions
  • Cranberries or cherries
  • Fresh fruit
  • Ingredients for the dressing:
  • Balsamic vinegar
  • Olive oil
  • Honey
  • Salt
  • Pepper
  • Garlic powder
  • A small amount of dry mustard.

Instructions

  1. Wild Rice: Cook as per packaged direction and add to kale while hot (helps to soften the kale)
  2. Add in chopped nuts (I frequently use almonds). Add something savory like red onions or scallions (chopped). Add dried fruit like cranberries or cherries cut to the desired size. Mix in any fresh fruit like pomegranates, mango, apple or whatever you have. Citrus fruits work well too.
  3. Mix the dressing in very well to help soften the kale.
  4. Other than the wild rice and kale, I usually use what I have at home and what is in season.
