It is a tight knit busi- ness run by a family who has ances- tors down south. 4 Brothers is known for their breakfast and lunch dishes featuring their famous chicken and waffles and homemade biscuits. So, for those craving that taste of the Deep South right here in New Jersey they don’t have to go far to experience dishes like fried green tomatoes, fried yellow squash and gator. All of 4 Brothers’ meals are homemade right on premises and made to order including their bayou sauces and syrups that are created with special spices. The owner said they may consider selling their sauces going forward as they are so original and different and the customers real- ly enjoy them. The owner also said the customers are usually very happy as they give generous portions of food that are reasonably priced. The recipes on their menu have actually been taken from childhood and developed into new recipes according to the owner. The photos that 4 Brothers feature on their website are real pictures of their sig- nature dishes taken by the chefs and also customers. All of the vegetables they use in their dishes are from local farms in New Jersey. As for history, 4 Brothers opened two years ago on Mother’s Day and has drawn a very local and dedicated crowd who enjoy mingling, network- ing and just kicking back to the music and ambience of a New Orleans, Gulf style southern kitchen. The restaurant does outdoor catering for family reunions and other events. They typically draw in local crowds from towns such as Plainfield, Piscat- away, New Brunswick, Newark and East Orange. The owner and his fam- ily have done all of the work on the restaurant themselves including the painting and decorating, but stated “I give all the credit to my Grandma Peppers – these are all her ideas.” 4 Brothers is presenting a new project that they are much focused on coming in August/September called “VIP Parlour” – a New Orleans style jazz club and restaurant that has live music and is B.Y.O.B. This restaurant is reservations only and for an adult crowd. The restaurant, which is right next door, will serve the same homemade recipes (tapas style) and will have an upscale dress code. The owner described the restaurant as a speakeasy type of club with great music, friends and family. It is the flipside of 4 Brothers , but in a dining room atmosphere with a night-life vibe. Customers will have to get a spe- cial invitation to the VIP Parlour as it is open to the public by word of mouth only. As far as the music and singing they’ll be presenting at VIP Parlour, the owner stated “you can enjoy the band here for three hours, however long.” People can expect to see a jazz- like, dim atmosphere with chande- liers, colorful walls, chairs and pol- ished wooden seating; there will also be an actual red carpet. This is a place where people can bring their wine satchels and enjoy a special evening. “We want it to be more of a rari- ty,” said the owner.
