Tom Carlin
Tom Carlin is the chef / owner
of
Gladstone Tavern.
Born in
Manhattan, raised in New Jer-
sey, Carlin studied fine art at
Rutgers College where he
worked his way through school
as a cook in a small French
Bistro. It was here that Carlin
began his transformation from
art student to chef. After work-
ing in some of New Jersey’s top
restaurants (including one with
future “Top Chef” Tom Colic-
chio) Carlin moved to Manhat-
tan to study with some of New
York City’s best chefs, focusing
on American cooking.
His first gig in the Big Apple
was at Jonathan Waxman’s
Jam’s, a hot-spot known for
their “farm to table” concept
that had been recently started
by New Jersey transplant Alice
Waters at Chez Panisse, where
Waxman had worked. Next Car-
lin joined one of American’s
most influential chefs Alfred
Portale doing his “architectural
cuisine” at his three star
Gotham Bar & Grill where he
advanced to sous chef. Carlin
continued to study with some of
New York City’s best chefs creat-
ing “fusion cuisine” with Chef
Barry Wine’s at his renowned
four star Quilted Giraffe and
again with Tom Colicchio at his
three star Mondrien where he
specialized in pastries.
After starting a family, Tom
headed back to New Jersey and
found his way to the bucolic
Gladstone-Peapack area, where
he earned an “Excellent” rating
from The New York Times in
1997.
In 2005 Carlin took posses-
sion of an historic 160 year old
building and transformed it into
a modern classic -
“
Gladstone
Tavern.”
Working fireplaces, a
long concrete bar, wide front
porch, spacious terrace dining
and oversized windows that
overlook a working herb garden
all make
Gladstone Tavern
a
memorable setting - but it is his
focus on creative American cui-
sine and their warm service that
inspires return visits.
In 2012 Cody Kendall of the
Star Ledger
awarded

Now a prominent destination
in the area, the
Tavern
offers a
number of family oriented
events over the year, many of
which have become local tradi-
tions such as “bring your dog to
dine day,” “local peach week”
and their family style Thanksgiv-
ing. If you wanted a Norman
Rockwell moment - you just
might find it at the Tavern.
