theconnectionsnj.com PAGE 29 SENIOR LIVING A Pinch of LOCAL FLAVOR Snow Ball Cookies • 1 cup butter • 3/4 cup powdered sugar • 1/2 tsp vanilla • 1/2 tsp almond extract • 2 1/2 cups all purpose flour • 1/4 tsp salt • 3/4 cup chopped pecans • Pre-heat oven to 400 degrees. • In a large mixing bowl combine butter, 1/2 cup sugar, vanilla and almond extract. • Beat at medium speed until light and fluy. • Add the flour and salt. • Beat until soft dough forms. • Stir in nuts. • Shape into 1 inch balls. • Place on an ungreased cookie sheet. Bake for 10 mins. Immediately roll cookies in powder sugar. • Stir in nuts. • Cool and reroll in powder sugar.
